Dry Roast the Whole Spices
o In a pan, dry roast the coriander seeds, cumin seeds, fennel seeds, black peppercorns, cloves, green cardamom pods, black cardamom pods, cinnamon stick, and bay leaves over medium heat until fragrant. Be careful not to burn them.

Grind the Spices
o Allow the roasted spices to cool. Then, grind them into a fine powder using a spice grinder or mortar and pestle.

Mix with Other Spices
o In a bowl, combine the ground spices with grated nutmeg, mace, dried ginger powder, red chili powder, and turmeric powder. Mix well.

Store the Masala
o Store the Nihari masala in an airtight container. It can be used for several batches of Nihari.
